Banana Bread with a Cinnamon Swirl Center

The other day I was really in the mood to bake something, but I didn't really have a lot of time to play in the kitchen. I also had a few bananas that were over ripe, so... banana bread it is!

Angel Food Cake

I love Angel Food cake. Usually I buy the box, and occasionally I will buy one already made. I wanted to see how difficult it would be to make one from scratch. Since I had plenty of fresh eggs, I decided to give this recipe I found a try. Here is the link to the recipe that I followed, except I didn't put the glaze on. It looks beautiful! I am sure the glaze is delicious, I just wasn't in the mood for the extra sweetness at the time. I had planned on topping the cake with some fresh berries and whipped cream, but, we didn't make it that far. Here is how it went...

Chicken Roasted in a Bundt Pan

This is something I came across one day on Pinterest and I knew I had to try it. You use a bundt pan to roast a whole chicken, and you even can throw some veggies in there to cook at the same time. I already had an old bundt pan I seldom use, might as well dig it out of the cupboard and give it a try. Here is how it went...

 Here is our old, circa 1970 something, bundt pan. This thing hasn't been used in years, yet for some reason I never got rid of it. Thankfully I didn't or else I never would have tried this. Notice I used some foil in the center to cover the open hole. I am so glad I thought of this BEFORE I started. An oven full of chicken drippings would not have been fun to clean.
